Macaroni & Seafood Salad

Ingredients:
  • 3 cups uncooked corkscrew macaroni
  • Lettuce leaves
  • 1 can tuna (oil reserved)
  • 1/2 pkg. frozen mixed vegetables (thawed and drained)
  • 1 can rolled anchovies
  • 16 pitted ripe olives
  • Pimento (diced)

Dressing:

  • Juice of 1/2 lemon
  • Oil drained from tuna
  • Garlic salt
  • Freshly ground pepper

Directions:

Cook macaroni according to package directions. Drain and rinse well in cold water until cool. Set in colander to drain completely. Line a shallow bowl with lettuce leaves. Add macaroni, drained tuna and defrosted vegetables. Garnish with anchovies, olives and pimento. Mix dressing and pour over salad. Toss before serving.
