Ingredients:

Dissolve gelatin in hot water. Combine remaining ingredients and put in mold. Serves 6.

Ingredients

  • 1 tsp. salt
  • 1 tsp. mustard (Dijon-style)
  • 1-2 tsp. tarragon
  • 2 Tbsp. chopped chives
  • 2 Tbsp. chopped parsley
  • 1 egg
  • Juice of 1 large lemon
  • 1/2 cup salad oil
  • 1/2 cup sour cream
  • Tabasco sauce
  • 1 - 2 cups cooked shrimp
  • Mixed salad greens including spinach for 6-8 servings
  • ground pepper

Directions

Prepare dressing by all dry ingredients in large salad bowl. Add egg and lemon juice. Slowly whisk in oil to form an emulsion. Add sour cream, shrimp, and a dash of Tabasco.

Thoroughly mix with salad greens and add freshly ground pepper to taste.

Ingredients:

  • 1 1/2 cups cooked seafood of your choice(such as crab meat, shrimp or lobster)
  • 1/2 cup mayonnaise or salad dressing
  • 1/4 tsp. pepper
  • 1 stalk celery (chopped=1/2 cup)
  • 1 small onion, (chopped=1/4 cup)
  • 4 hot dog buns

Directions:

Mix all ingredients together. Chill until ready to serve. Fill buns with salad mixture.

May substitute 1 1/2 cup cooked chicken for seafood or 1 (90z) can, drained tuna, adding 1 tsp. lemon juice to tuna salad.

Cook macaroni according to package directions. Drain and rinse well in cold water until cool. Set in colander to drain completely. Line a shallow bowl with lettuce leaves.

Ingredients

  • 1 pkg. lemon gelatin
  • 3 Tbsp. lemon juice
  • 1/2 tsp. prepared mustard
  • dash salt
  • paprika
  • 1 cup tuna, salmon, lobster, crabmeat, or shrimp
  • 1/2 cup thinly sliced celery

Tomato-Cucumber-Mayo Sauce:

  • 1/2 cup drained diced tomato
  • 1/2 cup cucumber
  • 1 tsp. minced onion
  • dash salt
  • 1 cup mayonnaise

Directions

Dissolve gelatin (follow directions on package). Add 3 Tbsp. lemon juice, mustard, salt, and paprika. Chill. When partially set, add 1 cup of seafood and 1/2 cup thinly sliced celery. Serve with Tomato-Cucumber-Mayonnaise after the ingredients have been mixed together.

One of my favorites!

Ingredients:

  • 10-12 oz. crab meat
  • 2 cans shrimp (6oz. size)
  • 4 hard-cooked eggs, chopped
  • 1 head lettuce, turn
  • 1/2 cup shredded cheddar cheese
  • 1/4-1 cup Thousand Island salad dressing
  • croutons

Directions:

Combine all ingredients in large bowl; mix well. Spoon onto salad plates. Garnish with croutons.

I have never had Sam's Club seafood salad, but I do make one. I use imitation crab flakes, salad shrimp, celery, Miracle Whip, macaroni shells and spices. (11/29/2006)

Sam's Club Seafood Salad

I've never been to Sam's either, but I make one of those salads whenever imitation crab is on sale for a dollar. Just mix the broken up crab with some sour cream, celery, cooked pasta, hardboiled eggs and maybe salt and pepper to taste. Proportions are up to what you have on hand and what you like. It's way cheaper than buying the $3.00 a pound stuff and every bit as good. If you're watching your weight, use light sour cream. (12/02/2006)
