Company Casserole

Ingredients:

  • 1 pkg. seasoned long grain and wild rice
  • 1 pkg. frozen broccoli, chopped (10oz.)
  • 2 cup cut up cooked ham or chicken
  • 1 cup grated sharp cheese
  • 1 cup mayonnaise
  • 1/4 cup Parmesan cheese
  • 1 can mushrooms, drained (4oz.)
  • 1 tsp. curry powder
  • 1 can cream of celery or mushroom soup
  • 2 tsp. mustard

Directions:

Cook rice and broccoli according to directions. Spread rice in bottom of buttered 9x13 inch pan. Top with broccoli, then ham or chicken, mushrooms and cheese. Blend soup, mayonnaise, mustard and curry powder. Pour soup mixture over all. Sprinkle Parmesan cheese over top. Bake at 350 degrees F for 45 minutes. Serves 6.

Recipe: Company Casserole

Ingredients

  • 2 cups chicken or turkey, diced or 1 can tuna
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1/2 cup mayonnaise
  • 1 cup canned mushroom pieces, including juice
  • 8 oz. pkg. fine noodles
  • 1/2 cup asparagus tips, drained
  • 1/2 cup sharp cheddar cheese, shredded
  • 1 medium sized green pepper, diced fine
  • 1/4 cup chopped almonds

Directions

Cook noodles according to directions on package. Drain. Heat together chicken, soups, mayonnaise and mushrooms. Stir gently but mix well. Put 1/2 of noodles on bottom of ungreased 2 qt. casserole. Cover noodles with a layer of asparagus tips. Top asparagus with 1/2 of the grated cheese. Cover cheese layer with 1/2 of the chicken mixture. Repeat the layering process. Top chicken with green pepper and almonds. Bake in preheated 350 degrees F oven for 45 minutes. Serves 10.
