Gum Drop Cake
- 1 cup gum drops, chopped
- 1 cup nuts or dates, chopped
- 2 cups flour
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1/2 cup butter
- 1/2 cup sugar
- 2 eggs
- 1 tsp. vanilla extract
- 1/2 cup milk
Dredge gum drops and nuts with 1/2 cup flour. Sift remaining flour with baking powder and salt. Cream butter and sugar. Add eggs and vanilla, beating until fluffy. Alternately add dry ingredients and milk to creamed mixture, beginning and ending with dry ingredients. Fold in gum drops and nuts. Pour batter into greased loaf pan. Bake in a preheated 325 degree F oven for 30 minutes.
Increase oven temperature to 350 degrees F and bake 30 minutes longer or until done. Frost with thin icing.
