Cream Scones

Ingredients

  • 2 cups flour
  • 2 Tbsp. sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 cup cold butter or margarine
  • 2 eggs
  • 1/2 cup heavy whipping cream, unwhipped

Directions

Preheat oven to 425 degrees F. In large bowl, combine flour, sugar, baking powder and salt. Using pastry blender, cut in butter until mixture resembles coarse crumbs. Separate 1 of the eggs. Reserve a small amount of egg white; set aside.

Place remaining egg white in small bowl. Add second egg and cream; whisk until blended. Add to dry ingredients; mix well. Cut into 6 squares; cut squares in half diagonally to form triangles. Brush with reserved egg white; place on greased baking sheet.

Bake 12-15 minutes or until golden brown. Serve split with butter, cream cheese or your favorite jam, if desired.
