Apple Stuffed Acorn Squash
- 2 acorn squash
- 3 tart apples
- 1 cup broken cashew nuts
- 1/2 cup maple syrup
- 1/4 cup margarine
- extra margarine
Wash squash. Cut in half lengthwise. Scoop out seeds and stringy substance. Wash, core, and dice unpeeled apples. Combine with remaining ingredients. Fill squash halves with apple mixture. Brush squash surfaces with additional margarine. Set in baking dish. Pour hot water into depth of 1/2 inch. Cover. Bake at 400 degrees F. for 45 minutes. Uncover last 5 minutes. Serves 4.
