Cheese Casserole (Microwave)

Ingredients

  • 2 Tbsp. butter
  • 1 onion, chopped
  • 1 can green chilies, chopped
  • 1 can tomato sauce (8oz.)
  • 1/2 tsp. salt
  • 2 eggs, beaten
  • 1 cup half and half
  • 1 package corn chips (6oz.)
  • 1/2 lb. sharp cheddar cheese, shredded
  • 1 cup sour cream
  • 1/2 cup sharp cheddar cheese, shredded
  • 3 ripe tomatoes

Directions

Melt butter for 30 seconds. Add onion and heat uncovered 3 minutes or until tender. Add chilies, tomato sauce and salt. Heat uncovered for 6 minutes. Beat eggs and half and half and gradually add egg mixture to hot sauce mixture a little at a time. Layer half of corn chips, half of tomato mixture and half of cheese in 2 quart casserole. Repeat layers and spread sour cream over top of casserole. Heat 5 minutes or until mixture begins to set. Sprinkle 1/2 cup of cheese over sour cream and arrange tomatoes in a ring around outside edge of casserole. Heat uncovered in microwave 4 minutes or until cheese melts and tomatoes are cooked. Turn casserole half turn after 2 minutes.
