Burrito Bake I

Here's a Mexican style dish we really like.

Ingredients

  • 1 cup Bisquick
  • 1/4 cup water
  • 1 can (16 oz) refried beans
  • 1 lb. ground beef, cooked and drained
  • 1 cup thick salsa
  • 1 1/2 cups shredded cheddar cheese

Directions

Grease a deep dish pie plate. Mix Bisquick, water and beans. Spread in pie plate.

Layer remaining ingredients on bean mixture.

Bake for 30 minutes at 375 degrees F.

Optional: Can serve with additional salsa, and/or sour cream, and hot sauce.

Burrito Bake II

This is a family favorite! I found it in a Wal-Mart employee cookbook several years ago. I shared this on www.recipezaar.com and it has 38 different people rate it highly!

Ingredients

  • 1 cup Bisquick
  • 1 can refried bean
  • 1/4 cup water
  • 1/2 lb. ground beef
  • 1 (16 ounce) jar taco sauce (not salsa)
  • 1 cup shredded cheddar cheese

Directions

In small mixing bowl mix Bisquick, water, and refried beans together. Spread in 8X8 inch baking dish.

Fry ground chuck until brown. Drain off any grease. Mix in taco sauce. Pour over "crust" mix. Sprinkle with cheese. Cover with foil. Bake at 375 degrees F for 25-30 minutes.

I use reduced fat bisquick, fat free refried beans, and lean ground beef (I fry up 80/20 ground beef, drain and rinse very well in hot water this will make the beef as lean as a 93% lean beef - I found this on a frugal website. I freeze it in 1/2 lb portions.)

This is good served with corn and a salad. I top my portions with all the taco fixings (lettuce, tomato, sour cream.)
