Apple Pumpkin Bread

Ahh, its Fall! Time for Fall cooking. The wonderful aromatic scents of all those spices! You will love this easy bread.

Prep Time: 20 minutes

Cook Time: 60 minutes

Total Time: 1 1/2 hour

Yield: 2 large loafs or nearly a dozen mini loaves

Ingredients:

Steps:

  1. Preheat oven 350 degrees F.
  2. In a very large mixing bowl, put butter, brown sugar, white sugar, eggs, cooled applesauce and pumpkin. Using a hand mixer, mix until smooth.
  3. In another large bowl, put flour, salt, baking soda, baking powder, cinnamon, nutmeg, cloves and ginger. Stir well together.
  4. Ad

  5. Slowly add the two together, mixing by hand with a spatula.
  6. Spray oil your pans. Then fill each pan 3/4 filled. I then cut up 2 large apples, peeled, cored and chopped them and sprinkled them about each loaf.
  7. Then in the oven for 60 - 65 minutes, testing with a toothpick until it comes out dry. Let them cool before cutting. Enjoy! :)

Hi, the mini foil (brand, ez-foil) pans are 6" long x 4" wide x 2 1/2" deep. I bought them at the Dollar store in pks. of 6. They are great, I then slice them each into 6 slices. The mix above made 10 mini loaves. That is 60 good size slices. I do a lot of cooking for places where I volunteer. It's a nice treat for them.
