Apple Spice Muffins

I make these apple muffins so chock full of apples, they should be called apples with a little muffin. *Yummy* I love apple season.


Prep Time: 20 minutes

Cook Time: 12-18 minutes

Total Time: 1 hour

Yield: 24 muffins

  1. Preheat oven to 375 F. Prepare muffin tin with paper liners.
  2. In a bowl mix butter, egg and sugar.
  3. In another bowl, add flour, salt, baking soda, baking powder, cinnamon and nutmeg.
  4. Beat both together until smooth. Using a spatula, fold in the apples and raisins/nuts if desired.
  5. As always read in recipes, to fill 3/4... Not true! You can over fill muffins, they cook up, not over! That is how you get that beautiful muffin top. Trust me!
  6. 8. Bake for 12 - 18 minutes or until you get a dry toothpick!

Looks like a really good recipe. When do you add the pumpkin, vanilla and apple juice?

Right after you have mixed the butter, sugars, and eggs, then add pumpkin, vanilla, and apple juice and mix well. Then all your dry ingredients, last would be your chopped apples, chose you fold in.
