Apple Muffins

Celebrate the season with Apples. I have just the recipe to satisfy your hunger. This muffin can be eaten anytime of day. It is delicious and nutritious.



  • 2 cups whole wheat flour
  • 1/4 cup toasted wheat germ
  • 1 Tbsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp. allspice
  • 1/2 tsp. nutmeg
  • 1 1/4 cups apples, peeled, cored, and coarsely chopped
  • 1 cup raisins
  • 1 egg white, beaten
  • 3/4 cup skim milk
  • 1/4 cup apple juice
  • Vegetable cooking spray


  • 1/4 tsp. cinnamon
  • 1/2 cup sugar
  • 3 Tbsp. boiling water


Preheat oven to 400 degrees F.

Combine all dry ingredients. Add apples and raisins. Combine all liquid ingredients. Add to dry mixture. Blend well.

Coat muffin tin with vegetable cooking spray. Fill each form two-thirds full. Bake 20 to 25 minutes or until golden brown on top. Using fork, prick holes in top of each muffin.

Glaze: Blend ingredients together and drizzle over each muffin.

30 Minutes Cooking Time

This sounds good but I noticed that there is no fat in this recipe. Is this correct?
