Celebrate the season with Apples. I have just the recipe to satisfy your hunger. This muffin can be eaten anytime of day. It is delicious and nutritious.

Directions:

Preheat oven to 400 degrees F.

Combine all dry ingredients. Add apples and raisins. Combine all liquid ingredients. Add to dry mixture. Blend well.

Coat muffin tin with vegetable cooking spray. Fill each form two-thirds full. Bake 20 to 25 minutes or until golden brown on top. Using fork, prick holes in top of each muffin.

Glaze: Blend ingredients together and drizzle over each muffin.

Servings: 12
Time:15 Minutes Preparation Time
30 Minutes Cooking Time

Ingredients

  • 2 cups flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. cinnamon

Mix all ingredients together in large bowl.

Add:

  • 1/2 cup raisins
  • 1 cup apple juice
  • 1/2 cup applesauce
  • butter, melted (set aside)

Mix all ingredients except melted butter. Stir just until combined. Spoon into lightly greased muffin pans bake about 20 minutes at 350 degrees F or until toothpick inserted into center comes out clean.

Topping for muffins

Topping Ingredients

  • 3 Tbsp. sugar
  • 1/4 tsp. cinnamon
  • 1/4 tsp. nutmeg

Topping Directions

Mix well. While muffins are still warm dip in melted butter then into topping.

Ingredients

  • 1 cup Cheerios, crushed
  • 1 1/4 cups flour
  • 1/3 cup brown sugar
  • 1 tsp. cinnamon
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 2/3 cup raisins
  • 1/2 cup applesauce
  • 1/3 cup milk
  • 3 Tbsp. vegetable oil
  • 1 egg

Directions

Preheat the oven to 400 degrees F. Grease the bottom of 12 muffin cups (can use paper muffin cups). In a large bowl, mix the Cheerios, flour, brown sugar, cinnamon, baking powder and baking soda together. Stir in the raisins, applesauce, milk, vegetable oil, and egg, just until the dry ingredients are moistened. Divide the batter evenly into each muffin cup and bake for 18-22 minutes.

My sister shared this recipe with me. With apples and coconut they are moist, chewy and very tasty. Enjoy!

In a large bowl, combine the flour, baking powder, salt, nutmeg and baking soda. In another bowl, beat eggs, sugar, oil and milk. Stir in apples, nuts and coconut. Stir into dry ingredients just until moistened.

Fill 18 greased muffin cups three-fourths full. Bake at 350 degrees F for 20 to 25 minutes or until a toothpick comes out clean. Cool muffins in pan for 10 minutes before removing to a wire rack.

Yields: 1-1/2 dozen muffins

Ingredients

  • 2 large eggs
  • 1 cup sour cream
  • 21 oz. can apple pie filling
  • 18 oz. cake mix, yellow, white, lemon or spice cake mix.
  • ground cinnamon

Directions

Preheat oven to 350 degrees F. Grease or paper-line 18 muffin cups, or 12 large muffin cups. Combine eggs, sour cream and apple pie filling. Add cake mix, but don't over mix. Place butter in muffin cups. Sprinkle tops with cinnamon. Bake for 25 to 30 minutes. Cool in pan for 10 minutes before removing. Serve warm with butter.

Note: Be sure there is at least one apple slice in every cup. Since there is no added fat, the muffins are a bit sticky, but they still taste wonderful.

I saw a recipe last week and I was going to print it and some how it disappeared off my computer. It was either a cinnamon bun apple cupcake or cinnamon bun apple muffin. You used a cinnamon roll and flattened them out to fit in a muffin pan. Then you added your apples and other spices in the middle and I am not sure what else, but I think there was a topping too. Does anyone have it If so I would really appreciate it
