Apple Muffins cooling on rackThese muffins are perfect for fall. There are great sales on apples now! I used Truvia brown sugar blend.

Cook Time: 25 minutes

Total Time: 40 minutes

Yield: 12-16

Ingredients:

  • 2 unpeeled apples,chopped
  • 1/2 cup honey or brown sugar
  • 1 egg, beaten
  • 1/4 cup oil or melted butter
  • 1 cup milk
  • 1 3/4 cup whole wheat flour
  • 1/2 - 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 2 tsp baking powder

Steps:

  1. Put chopped apples in a bowl and add honey or sugar. Mix.

  3. In a large bowl mix the egg, oil and milk.

  5. Sift in the flour, cinnamon, salt and baking powder.

  7. Stir just enough to moisten.

  9. Fold in apples.

  11. Bake in greased muffin tins at 400 degrees F for 20-25 minutes.

Recipe for Apple Cinnamon Muffins. Mix all ingredients except melted butter. Stir just until combined. Spoon into lightly greased muffin pans bake about 20 minutes at 350 degrees F or until toothpick inserted into center comes out clean.

Preheat the oven to 400 degrees F. Grease the bottom of 12 muffin cups (can use paper muffin cups). In a large bowl, mix the Cheerios, flour, brown sugar, cinnamon, baking powder and baking soda together.

I saw a recipe last week and I was going to print it and some how it disappeared off my computer. It was either a cinnamon bun apple cupcake or cinnamon bun apple muffin. You used a cinnamon roll and flattened them out to fit in a muffin pan. Then you added your apples and other spices in the middle and I am not sure what else, but I think there was a topping too. Does anyone have it If so I would really appreciate it

I like low sugar recipes, and I always post my successes. This has an optional cinnamon sugar topping, which will post but did not use to save calories.
