Celebrate the season with Apples. I have just the recipe to satisfy your hunger. This muffin can be eaten anytime of day. It is delicious and nutritious.

Directions:

Preheat oven to 400 degrees F.

Combine all dry ingredients. Add apples and raisins. Combine all liquid ingredients. Add to dry mixture. Blend well.

Coat muffin tin with vegetable cooking spray. Fill each form two-thirds full. Bake 20 to 25 minutes or until golden brown on top. Using fork, prick holes in top of each muffin.

Glaze: Blend ingredients together and drizzle over each muffin.

I make these apple muffins so chock full of apples, they should be called apples with a little muffin. *Yummy* I love apple season.

Cook Time: 12-18 minutes

Total Time: 1 hour

Yield: 24 muffins

Ingredients:

  • 2 cups all purpose flour
  • 4 cups chopped Macintosh apples, peeled, cored & cut
  • 1/2 cup white sugar
  • 1/2 brown sugar
  • 2 jumbo eggs
  • 1 stick of butter (8 Tbsp) melted
  • 1 can pumpkin (15 oz)
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 1/2 Tbsp cinnamon
  • 1 tsp nutmeg
  • 2/3 cup apple juice
  • 1 cup raisins (opt)
  • 1/2 cup chopped nuts (opt)

Steps:

  1. Preheat oven to 375 F. Prepare muffin tin with paper liners.

  3. In a bowl mix butter, egg and sugar.
  4. In another bowl, add flour, salt, baking soda, baking powder, cinnamon and nutmeg.
  5. Beat both together until smooth. Using a spatula, fold in the apples and raisins/nuts if desired.
  6. As always read in recipes, to fill 3/4... Not true! You can over fill muffins, they cook up, not over! That is how you get that beautiful muffin top. Trust me!
  7. 8. Bake for 12 - 18 minutes or until you get a dry toothpick!

Recipe for Apple Cinnamon Muffins. Mix all ingredients except melted butter. Stir just until combined. Spoon into lightly greased muffin pans bake about 20 minutes at 350 degrees F or until toothpick inserted into center comes out clean.

I saw a recipe last week and I was going to print it and some how it disappeared off my computer. It was either a cinnamon bun apple cupcake or cinnamon bun apple muffin. You used a cinnamon roll and flattened them out to fit in a muffin pan. Then you added your apples and other spices in the middle and I am not sure what else, but I think there was a topping too. Does anyone have it If so I would really appreciate it
