Baked Sweet Potato Halves

When I bake whole sweet potatoes in the skins, the juice runs out and sticks to the aluminum foil. Before I put the foil in the trash, I can't help but break off the pieces of juice that have hardened and eat them. It's like eating candy.

With this recipe, you don't lose the juice. It leaves a crisp topping and makes the sweet potato even sweeter.

Prep Time: 5-10 minutes

Cook Time: 40 minutes or more depending on size of the sweet potato

  1. Preheat oven 350 degrees F.
  2. Wash sweet potatoes and dry with paper towel.
  3. Place on cutting board and cut potato in half lengthwise.
  4. Spray baking pan with Butter Pam cooking spray.
  5. Lay sweet potato halves on baking sheet, skin side up, flesh side down.

  7. Bake at 350 F until tender and skins are a little wrinkled. Approximately 35-50 minutes depending on the size of the potatoes.
  8. Remove from the oven. Use a metal spatula (flipper) to scoop the potatoes up while they are still hot.
  9. Sprinkle with salt and enjoy.
