A simple dessert to cook in coals.



Cut a wedge shaped section in each banana. Pull back peel. Remove wedge shaped piece of banana. Fill cavity with milk chocolate chips and marshmallows. Replace peeling over filling. Wrap securely in heavy duty foil. Heat about 5 minutes over coals until chocolate and marshmallows melt.

You can modify this dessert any way you'd like according to diet restrictions of family, friends, etc. A deeper cake dish usually works best. I always try to stick with glass; I usually get a metallic taste when I use metal pans for fruit. Chilling well worked best for me. Set a chilled dish on a dry dishcloth when removing from fridge. NEVER allow rapid, extreme temperature changes with glass dishes.




Place the pan or dish you will use in fridge/freezer to chill well.

Slice and place banana bread in fridge to chill.

If whipped topping is frozen, thaw in fridge.

Chill bananas (whole-not peeled) in fridge.

Prepare instant pudding according to directions, then chill (no, not you. Chill the pudding. Ha.)

Peel and slice chilled bananas. Set aside or in fridge.

Place banana bread slices on bottom of chilled pan. Spread pudding to cover the bread layer. Place a layer of sliced bananas on the pudding. Gently spread a thick layer of whipped topping over the bananas. Layer as desired, but end with the top being whipped topping.


If you are pressed for time, the pre-chilled ingredients make for a much faster serving time and the dessert just layers better - no smooshing together in a "soupy" mixture.

  • 1 1/2 cups graham cracker crumbs
  • 1 cup sugar, divided
  • 1/2 cup butter, melted
  • 2 packages cream cheese, softened (8 oz. each)
  • 1 can crushed pineapple, drained (20 oz.)
  • 6 medium bananas, divided
  • 2 cups cold milk
  • 2 packages vanilla flavor instant pudding and pie filling (reg. size)
  • 2 cups whipped topping, thawed and divided
  • 1 cup pecans, chopped


Mix the graham cracker crumbs, 1/4 cup of the sugar and the butter together. Press into the bottom of a 9x13 inch pan and freeze for 10 minutes. Beat the cream cheese and remaining 3/4 cup of sugar with electric mixer, on medium speed, until well blended.

Spread over the crust and add the pineapple. Slice 4 of the bananas and arrange them over the pineapple. In a medium bowl, mix together the milk and add the dry pudding mixes. Beat with a wire whisk for 2 minutes or until well blended. Stir in 1 cup of the whipped topping and spread over the banana layer. Top with the remaining 1 cup of whipped topping and sprinkle with the pecans. Refrigerate for 5 hours. Slice the remaining 2 bananas, just before serving and arrange them over the dessert. Store any leftover dessert in the refrigerator.
