Buy and Freeze Overripe Bananas

I have a tip for all those who enjoy banana bread. When bananas are being sold at a reduced price because they are over ripe, have blackened skins, buy them. Mash them, measure out what you need for each recipe and put the mashed bananas in a zip lock sandwich bag. I know these are not for the freezer, so put the sandwich bag inside a zip lock freezer bag and you have mashed bananas, enough for one recipe of banana bread any time you want it without going to the market.

If you want to save even further. Just put the whole banana in a freezer ziplock bag and defrost either on the counter or microwave. Most recipes call for 2 or 3 bananas depending on the size. The bag is continually kept in the freezer for future use. (01/01/2010)
