Ingredients:
- 1 egg
- 1/3 cup oil
- 1 cup V-8 juice
- 1/2 cup shredded cheese ($.60)
- 1 3/4 cup flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
Steps:
- Mix the egg, oil, V8, and cheese together.
- In a separate bowl combine the dry ingredients.
- Combine the dry ingredients with the egg mixture, do not over mix.
- Pour batter into muffin cups.
- Bake at 400 F for 20 minutes.
