Great for a snack or as a substitute for pasta, potatoes or rice at dinner. Easy to make, too! These muffins freeze well, as long as they are packed carefully so they don't get crushed.

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: 12 Muffins

Ingredients:

  • 3/4 cup whole wheat flour
  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 1 Tbsp baking powder
  • 3/4 cup grated cheddar cheese (I used finely shredded)
  • 2 eggs
  • 1/4 cup oil
  • 1 cup milk
  • 1/4 cup honey
  • Parmesan cheese for sprinkling on top

Steps:

  1. Preheat the oven to 400 degrees F.
  2. Ad

  3. Grease the muffin tins. Muffin liners are not recommended for this recipe.
  4. Stir together both flours, cheese, salt and baking powder in a large bowl.
  5. In another bowl, mix the eggs, oil, milk and honey.
  6. Make a well in the bowl with the flour. Pour in the wet ingredients and combine. The batter will be lumpy.
  7. Fill the muffin tins 3/4 full.
  8. Sprinkle Parmesan cheese on the top of the muffins.
  9. Bake for 20 minutes, or until golden brown.

These make soft, flavorful muffins!

Yield: 8-12 servings

Ingredients:

  • 1 egg
  • 1/3 cup oil
  • 1 cup V-8 juice
  • 1/2 cup shredded cheese ($.60)
  • 1 3/4 cup flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Steps:

  1. Mix the egg, oil, V8, and cheese together.
  2. In a separate bowl combine the dry ingredients.
  3. Combine the dry ingredients with the egg mixture, do not over mix.
  4. Pour batter into muffin cups.
  5. Bake at 400 F for 20 minutes.
