I am eating from my pantry as much as possible. This recipe has only 1/2 pound of ground meat for 4 servings.  I used ground turkey.
Prep Time: 15 minutes 
Cook Time: 1 hour
Total Time: 1 hour and 15 minutes. 
Yield: 4 servings
Ingredients:
- 1  tsp oil
- 1  can (16-ounce) tomatoes
- ½ pound lean ground beef or turkey
- 3  cups water
- 1-2  large green bell peppers, diced
- 2  Tbsp cornmeal
- 1  large onion, chopped fine
- 1  Tbsp chili powder
- 1  tsp garlic powder
- 1  tsp cumin (optional)
- 4  cups (or two 15½-ounce cans)cooked pinto beans, undrained
- 1  tsp paprika (optional) 
Steps:
- Put oil in frying pan. Cook beef until brown. Drain off any fat. 
- Add peppers, onion and garlic; cook for 3 to 5 minutes. 
- Add remaining ingredients. Simmer, uncovered, on low heat. Stir occasionally until thick.
