Coffee Can Baked Chicken

For the best slow cooked baked chicken, use my favorite way to cook chicken. It's a family favorite!

Ingredients:

We love lemon pepper chicken but you can use any seasonings you like.

Steps:

  1. You use a empty 35 oz large aluminum coffee can. Wash inside and out remove any plastic that might cover the can. Make sure to dry the inside of can well.
  2. Have chicken ready. Rinse all cavities and pat dry. We cut two lemons in half and stuff into chicken. Then sprinkle lemon pepper on entire chicken top to bottom and all around wings, making sure to include all crevasses.
  3. Spray inside of coffee can with vegtable spray. Stuff chicken in can. Seal off end of can with aluminum foil. Place in a pan with sides (example: lasagna pan).
  4. Bake at 250 degrees F for two hours (may be longer for a large bird).
  5. When chicken is done cooking, it's the most melt in your mouth tender chicken you'll ever taste! Bon appetit!

This sounds delicious. I suspect that four hours at 350 degrees with no liquid is too much and would result in burned, dried chicken. Could the time listed be incorrect?

That sounds way too long to me too. Is the can put in vertically or horizontally? Which end goes in first into the can?

That sounds delicious, but can you get coffee in a metal can these days? My coffee comes in a plastic container, but I haven't noticed any other kind that may come in metal.

This sounds like a good recipe but I worry about the use of the can. Most cans have a film of BPA resins covering the inside.
Studies have found that "BPA exposure
may cause multiple health problems,
including reproductive disorders, diabetes and cardiovascular disease." They have also found that BPA levels rise in food when heated in a container made of BPA plastic. A lot of plastic products these days have a label saying BPA free but most canned food still uses the resin to coat their cans.

The FDA has found that BPA used in this manner is safe but that is with the assumption that these cans are not being heated. It has been found to effect children most of all.

Possibly you could find another method using foil instead that would have similar results?
