I like this because it is an inexpensive, healthy way to feed my family.


  • 1 chicken
  • 1/4 tsp. salt
  • dash pepper
  • 2 Tbsp. milk
  • 3/4 cup cornflakes crumbs


Preheat oven to 400 degrees F. Wash and dry chicken pieces. Season the pieces, dip them into milk, and coat with corn flake crumbs. Arrange in single layer in an oiled shallow baking dish. Pieces of chicken should not touch each other. Bake 45 minutes. You can turn them half way through cooking time if you like.

Servings: 8
Prep Time: 10 Minutes
Cooking Time: 45 Minutes

This is a great way to substitute fried chicken for baked and still have the crispiness. Also a bit healthier!


  • 1 chicken, cut up
  • 1 cup flour
  • 1/2 cup cracker crumbs
  • 2 medium size eggs
  • 2 Tbsp. cold water
  • 1/4 tsp. salt


Beat eggs, water, and salt very well and put in another flat bowl. Dip chicken pieces first in egg mixture until well coated and then roll in crumbs.


Place on greased cookie sheet or jelly roll pan. Sprinkle salt on each piece as well as a little Lawry's seasoning salt and garlic salt.

Place in preheated 450 degrees F oven and turn down at once to 325 degrees F. Bake 1 hour, more or less, depending on the size of chicken pieces. If chicken browns too fast, place aluminum loosely over top.

Servings: 6-8

Cooking Time: 60 Minutes

  • 3 Tbsp. margarine of butter
  • 1 1/2 cup Betty Crocker Potato Buds mashed potatoes (dry)
  • 1/4 cup Parmesan cheese (grated)
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 1/2 - 3 lb. broiler fryer chicken (pieces)
  • 1 egg (beaten)


Heat oven to 425 degrees F. Heat margarine in 9x13 inch rectangular pan in oven until melted. Mix potatoes, cheese, salt and pepper.


Dip chicken into egg, and roll in potato mixture. Place skin side up in pan. Bake, uncovered 50 minutes or until thickest pieces are done and coating is crisp. Makes 6 servings.
