Crab Potato Salad in bowlThis is a simple way to lift the average potato salad. I used imitation crab meat, but you can surely use the real thing if you'd like.

Yield: 6-8 servings

Ingredients:

  1. Place potato cubes in a saucepan and cover with water. Bring to a boil over medium-high heat and cook for 15-20 minutes, until tender. Drain.
  2. cut potatoes
     
  3. In a large bowl, mix together pickles, crab meat, and onions.
  4. diced pickles and crab in bowl
     
  5. Mix in the potatoes, eggs, mayonnaise, sour cream. Mash with a fork until potatoes are half lumpy, half smooth. Add salt and pepper to taste. Refrigerate for a couple hours before serving.
