Better than lemon meringue pie and easier to make.

Ingredients:

Crust

Filling

*Or 1 carton cream whipped with 1 tsp. plain gelatin dissolved in 3 Tbsp. water; add 2 Tbsp. sugar

Directions:

Make or use pre-made pie crust. Bake and cool.

Beat cream cheese, lemon juice and powdered sugar. Add whipped cream. Spread onto crust.

Cook pudding according to directions. Cool. Spread over cream cheese mixture. Spread Cool Whip on top. Refrigerate until needed.

Servings: 12
Time:30 Minutes Preparation Time
15 Minutes Cooking Time

Ingredients:

  • 20 graham crackers
  • 1/2 cup sugar
  • 1/2 cup margarine, melted
  • 40 large marshmallows
  • 1 cup milk
  • 1 container Cool Whip (8 oz)
  • Ad

  • 1 package cream cheese (3 oz.)
  • 1 package strawberry gelatin (6 oz)
  • 2 cups boiling water
  • 2 small packages. frozen strawberries

Directions:

Crush graham cracker crumbs. Combine graham crackers, sugar and margarine. Save a few graham cracker crumbs for top. Pat into a 9x13 inch pan. Melt marshmallows in milk. Cool. Add Cool Whip and cream cheese to marshmallow mixture. Pour one half of mixture over graham cracker crust. Dissolve gelatin in boiling water, add frozen strawberries. When partially set, pour over marshmallow mixture, then add remaining marshmallow mixture as top layer. Sprinkle graham crackers on top.

Ingredients

  • 1 large pkg. cream cheese, softened
  • 1 crushed pineapple and juice (20oz.)
  • 1 small jar maraschino cherries, cut up (and juice)

  • 100 mini marshmallows
  • 1/2 cup chopped nuts
  • 1 small container Cool Whip (8oz.)

Directions

Beat cream cheese and pineapple and juice together. Add cherries and juice, marshmallows, and nuts. Add in Cool Whip. Mix all together and refrigerate. Fills a medium size bowl.

Graham Cracker Crust

Ingredients

  • 3 Tbsp. white sugar
  • 1/3 cup butter or margarine, melted
  • 1 1/2 cups or 18 graham crackers, crushed

Directions

Mix together and put in bottom of pan. Save 1/4 cup of crumbs for top, if desired.

Cherry Filling

Ingredients

  • 1 package cream cheese (8oz.)
  • 15 oz. can condensed milk
  • 1 tsp. vanilla, or to taste
  • 1/3 cup lemon juice
  • 1 can cherry pie filling (1lb.)

Directions

Soften cream cheese and whip until fluffy. Gradually add condensed milk and continue to beat until fluffy and well blended. Blend in lemon juice and vanilla. Pour into crust. Chill 2-3 hours. Spread cherry pie filling over top and sprinkle with remainder of graham cracker crumbs. Note: Can use ready-made crust from the store to save time.

In a bowl, combine the cracker crumbs, sugar and butter. Divide among eight dessert dishes, about 4 rounded teaspoonfuls in each. In a small mixing bowl, beat cream cheese until smooth. gradually add milk until blended.
