Garlic Ginger Double Fried Chicken

chicken on plate with lemon & veggiesThis is my mother's recipe for a super scrumptious fried chicken laced with garlic and ginger. They are super crispy on the outside, and so tender and juicy on the inside. We call this pure comfort food!

In this recipe we cut the thighs in half. You can cut them into smaller bits and make popcorn chicken, which is also awesome!

Yield: 4 servings

Steps:

  1. Cut each chicken thigh into 2 pieces. Place in a bowl with garlic, ginger, soy sauce, sake and sugar. Mix and coat well. Cover and place in the refrigerator for at least 2 hours.

  3. Remove chicken from fridge. Do not drain the marinade as this will turn the next step into a batter. Whisk together the potato starch and flour, then add to chicken pieces. Make sure everything is well coated.

  5. Heat oil to about 320F and fry the chicken, turning once, until lightly browned in about 5-7 minutes. Work in small batches. Transfer to a rack to drain.

  7. After you fry all the chicken pieces, bring the oil up to about 350F and refry them until they are golden brown. Place on rack to drain. Sprinkle with a bit of salt and serve with lemon wedges.
