Gluten Free Coconut Pie

No crust is needed to make this pie which makes it really easy to prepare. The Gluten Free Bisquick settles to the bottom and makes a delicious crust. Coconut pie is one of my favorites. I wish I could have it every day. Is there some magical way I can remove the calories without changing the recipe?

Prep Time: 10 minutes

Cook Time: 25-30 minutes

Total Time: 40 minutes plus cooling time

Yield: 8 servings



  1. Preheat oven 400 degrees F. Place the butter in the pie pan. Set it in the oven while it is preheating and melt the butter.
  2. Combine Bisquick and sugar. Add other ingredients and 1 Tbsp of the melted butter. Pour into the buttered pie pan.
  3. Bake at 400 degrees F. for 25-30 minutes until custard sets.
  4. Cool before slicing.

Use the stevia baking blends. Use half as much as the recipe calls for, as it is very sweet.

Thank you. I'll have to try that. First, I have to lose 5 pounds before making any more desserts. I get started on desserts and can't quit.
