It's my daughter's 11th birthday in a couple of week,s but we don't know what to do for it. She definitely wants to go out with about 5 other girls and do something different. She is definitely a girly girl, but we have already done the spa and makeup thing. She loves gymnastics and baking.

I would rent a gymnastics place. Serve cupcakes or a cake that she baked and frosted.
My daughter drives me bonkers with that nail polish. Oh, how beautiful though. I don't know if you have a 5 below store near you. You would not regret it at all. Gather up about 5 friends.
Have their moms give them a little spending money. Park your car by the entrance to let them out.
When you go in just wear comfy shoes. My daughter is 23 and you still can't get her out the beauty section. The books are priceless.
If you are not broke Afterwards take your daughter to the beauty school. I was a student and one of the best things was young girls who were into pretty things.Your daughter will adore it.

I'm not sure if you live in a location that has a Build a Bear in your area. You could always take her there and have the girls help her to make a stuffed animal and dress it up. I know many times they have coupons for this place and you can maybe get a small one for each of the girls. Afterwards, take them to the ice skating rink and let them skate for an hour or so. You can take cupcakes or something with you for the children to have while skating.
If you mall has a place to make necklaces or something like this you could also consider this.
