Instant Pot Meatloaf

Meatloaf on plateThis is by far the juiciest loaf I ever made. You can use other ground meats besides ground turkey, and vary the seasonings and liquid. It is great in the summer because it wont heat up the kitchen. Leftovers taste great cold.

I used one pound of meat. You can use more. Cooking time remains the same.

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes

Yield: 4 servings

Ingredients:

  • 1 lb ground turkey
  • 1 egg
  • 1/2 cup bread crumbs
  • 1/2 onion, chopped
  • salt, pepper, poultry seasoning, Italian seasoning, garlic powder to taste
  • 1/2 cup milk (I used leftover whey)
  • tomato sauce or ketchup

Steps:

  1. Combine all ingredients well in a bowl.

  3. Put 1/2 cup of water in the Instant Pot. Put a steamer in the pot.

  5. Shape a dish out of foil that will hold the meatloaf and its juices during cooking.
  6. Put the meatloaf in the foil dish.

  8. Put the meatloaf on top of the steamer. Spread tomato sauce or ketchup on the top.

  10. Pressure cook for 15 minutes. Natural release for 10 minutes.

I use mini loaf pans to make my meatloaf in. Cover with foil and cook the meatloaf. Then uncover and broil a few minutes under the broiler. Delicious!!

Update to 2021 !!

I now use my Ninja Foodi to cook the meatloaf in instead of my Instant Pot....only because of the Air Fry/Broil feature. That way I don't have to take it out of the Instant Pot and put it in the oven to finish.

Instead of the mini loaf pans that I was using, I form the meat into a loaf and place on foil like the above recipe does. However, I take a fork and poke several holes in the bottom of the foil so that all the grease can drain out!! What a concept, right? Then I pressure cook for 25-30 minutes based on how big the loaf is.

Then after it's cooked, I spread BBQ sauce or ketchup on top of the meatloaf and lower the lid and broil it for a few minutes. Sooooo good and not all greasy!! The best meatloaf I have ever had!!
