Italian Ice (Granita) Recipes

Italian Ice (Granita)Granita is to Italy, what snow cones are to America, but you don't need a special machine and it's oh so easy to make. :-)

Ingredients:

  • 1 cup water
  • 1/2 cup sugar
  • 3 cups fruit juice of choice

Directions:

Place a large shallow baking pan in the freezer.

Bring sugar and water to a boil in a medium saucepan, stir until sugar dissolves, remove from heat, and let cool.

Stir in fruit juice; pour mixture into chilled baking pan, place in freezer and stir, beginning with outer edges, every 20 to 25 minutes until ice crystals have formed throughout.

This is the almost exact recipe I use. I did grapefruit ice last week and am doing lime ice this weekend. When doing a citrus ice I normally add lemon or lime zest.

I do similar, but, I freeze mine as ice cubes, then when solid run them thru the ice shaver setting on my blender. It saves the stirring and doesn't spill in the freezer.
