Italian Sausage Spinach Orzo Soup

This is a Fall favorite. It is so warming and delicious with lots spices and flavors. Enjoy making this very easy soup.

Yield: 6 - 7 quarts



  1. Using a large soup pot, start by opening the rolls of sausage and scramble the sausage until it is all broken up.
  2. Add all minced vegetables and stir in and cook.
  3. Add all seasonings onto the meat mixture.
  4. Add the chicken broth, stirring in, add tomatoes, stirring in well. Let this come to a boil, then down to a simmer. For about an hour.
  5. Then add spinach and Orzo. Let cook until pasta is tender. Then it can be served. Or shut it off and cover it. It can be served with a bit of grated cheese.
