Lentils and Quinoa with Shiitake Mushrooms, Tomatoes and Spinach in bowl

Ingredients:

  • 1/3 bag mushrooms
  • 1/2 white onion
  • 1 can tomato
  • lentils
  • quinoa
  • 1 tsp olive oil

Steps:

  1. Dice white onions.
  2. Cook quinoa and lentils separately. Follow the instructions for boiling. Depends on how many people you are serving and your preference.
