This is a quick, easy and nutritious meal to make. You can opt for other vegetables and customize to your liking.

Cook Time: 15 minutes
Total Time: 20 minutes
- 1/3 bag mushrooms
- 1/2 white onion
- 1 can tomato
- 1 tsp olive oil
- Dice white onions.
- Cook quinoa and lentils separately. Follow the instructions for boiling. Depends on how many people you are serving and your preference.
- While the lentils and quinoa are cooking, use a large pan; add olive oil over medium heat. Add diced white onions and caramelize.
- Add can of tomatoes.
- Add shiitake mushrooms, spinach and sauté for a few minutes until fully cooked. You can serve this over combination of lentils and quinoa as is.
- I like to combine and mix with quinoa and lentils. Ready to serve and eat.
