To make roux I use a large glass mixing bowl and add about a cup of flour to 1/2 cup oil. Mix with a whisk. Put in microwave and cook until brown whisking often. It will burn real easily if not whisked often. Usually takes about 8 minutes to cook to a nice brown. You can adjust the ingredients to taste and size. I like to make a lot and store in the refrigerator to use in gumbos and gravies. It will keep forever.
