Making Roux For Gumbo

Category Sauces
Roux is a thickener for sauces made by mixing equal parts of flour and fat (especially butter) and cooking the mixture until it reaches the desired color. The darker the roux the more flavorful it becomes. This is a page about making roux for gumbo.

To make roux I use a large glass mixing bowl and add about a cup of flour to 1/2 cup oil. Mix with a whisk. Put in microwave and cook until brown whisking often. It will burn real easily if not whisked often. Usually takes about 8 minutes to cook to a nice brown. You can adjust the ingredients to taste and size. I like to make a lot and store in the refrigerator to use in gumbos and gravies. It will keep forever.
