Muffin Tin Asparagus Frittatas

These frittatas are packed with protein, delicious and easy to make! Perfect for bite sized appetizers or grab a few for a breakfast on the go.

Total Time: 20 minutes

Yield: 1 dozen

Ingredients:

Steps:

  1. Using a food processor or by hand, grate Parmesan cheese.
  2. In a large bowl, crack eggs, add grated Parmesan cheese, salt, milk and asparagus (I used frozen asparagus). Mix well.
  3. Lightly grease your muffin tins.
  4. Pour evenly in each muffin tin and bake at 375 degrees F for about 12-15 minutes, or until ready.

No "grease" required if using silicone muffin cups, reduce fat content (and animal protein-based fats) by using egg whites, skim-milk parmesan and omit milk entirely. Add vegetable protein with hemp and / or ground flax. Other vegetables (chopped mushrooms, bell peppers, onions, celery) may be added or substituted. An excellent snack and - as you say - quick meal on the go.
