Yield: 1 dozen
- 2 Tbsp Parmesan cheese
- 2 Tbsp milk
- 3 eggs
- 1/4 cup asparagus
- 1/4 tsp salt
- Using a food processor or by hand, grate Parmesan cheese.
- In a large bowl, crack eggs, add grated Parmesan cheese, salt, milk and asparagus (I used frozen asparagus). Mix well.
- Lightly grease your muffin tins.
- Pour evenly in each muffin tin and bake at 375 degrees F for about 12-15 minutes, or until ready.
