Muffin Tin Asparagus Frittatas

These frittatas are packed with protein, delicious and easy to make! Perfect for bite sized appetizers or grab a few for a breakfast on the go.
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes
Yield: 1 dozen
- 2 Tbsp Parmesan cheese
- 2 Tbsp milk
- 3 eggs
- 1/4 cup asparagus
- 1/4 tsp salt
- Using a food processor or by hand, grate Parmesan cheese.
- In a large bowl, crack eggs, add grated Parmesan cheese, salt, milk and asparagus (I used frozen asparagus). Mix well.
- Lightly grease your muffin tins.
- Pour evenly in each muffin tin and bake at 375 degrees F for about 12-15 minutes, or until ready.

No "grease" required if using silicone muffin cups, reduce fat content (and animal protein-based fats) by using egg whites, skim-milk parmesan and omit milk entirely. Add vegetable protein with hemp and / or ground flax.
Other vegetables (chopped mushrooms, bell peppers, onions, celery) may be added or substituted. An excellent snack and - as you say - quick meal on the go.
