Brown beef and drain. Combine tomatoes and water in kettle. Add mushrooms, celery, carrots, onion, and meat. Simmer 30 minutes. Add rice, potatoes, and seasonings. Simmer 45-60 minutes or until veggies are tender.

In a small saucepan, saute the mushrooms, onions and garlic in oil until tender. Stir in the broth, parsley, thyme and pepper.
Heat the butter in a large saucepan. Add the shallots and cook until they are translucent, about 3 minutes. Add the mushrooms and cook 5 minutes longer, stirring occasionally.
