Ingredients:

  • 1 cup finely crushed soda crackers
  • 1/4 cup melted margarine
  • 2 cups thinly sliced onions
  • 2 Tbsp. margarine
  • 3/4 cup milk
  • 2 eggs
  • 3/4 tsp. salt
  • pepper, to taste
  • 1/2 cup shredded mozzarella cheese

Directions:

  1. Mix cracker crumbs with melted margarine; press into 9 inch pie plate for crust.
  2. Saute' onions in 2 Tbsp. margarine, just until golden. Put onions in pie shell.
  3. Beat eggs, milk, salt, and pepper together; pour over onions.
  4. Top with mozzarella cheese and bake for 30 minutes at 350 degrees F.

Servings: 6-8

Cooking Time: 30 Minutes

Soak peas overnight. Drain and pressure cook (about 20 minutes) or bring to a boil and simmer till they are soft. Simmer the onions in about 2 Tbsp. of oil together with the cup of water with the dissolved cube, until water is nearly evaporated and onions are well softened. Add the tablespoon of curry, salt and pepper to taste, stir it around for 2 or three minutes and switch it off and mix in the cooked peas.

While onions are cooking, make the pastry (or buy ready made). Put 300 grams plain flour (I think it's called all purpose flour in the U.S.)in a bowl, add a pinch of salt and 150 grams of cold (as in straight from the fridge) margarine cut up into little cubes. Mix all together with a knife and add enough COLD water to make a dough.

Knead just enough to get it together. Roll out 2/3 of the pastry to line an 8 inch square pan or whatever. Tip in the peas and onions mixture. Roll out and cover with the remaining 1/3 of pastry. Prick top with a fork and bake in a 200 degree C. oven (392 degrees F).

This is very filling and is enough to serve four people.

Melt butter, crunch up crackers, mix together crackers and butter and press into baking dish for the crust (save some for the top).
