Porcupine Meatballs

Ingredients

  • 1/2 cup uncooked rice
  • 1 lb. ground beef
  • 1 Tbsp. minced onion
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 can tomato soup
  • 3/4 can water
  • Dash of chili powder

Directions

Combine rice, beef, onion, salt, and pepper and form into balls. Mix soup, water and chili in pressure pan and add meatballs. Cook 12 minutes at 10 lbs. pressure.

Try mushroom soup for an elegant version - good enough to serve company, with a sprinkling of parsley!

I have made the tomato soup versions for years, often in large batches to freeze leftovers. They make excellent Meatball sandwiches with some spaghetti sauce, or fillings for tacos and burritos. (08/13/2008)
