I used all left over mashed potatoes to make potato puffs.
I season the mashed potatoes up with garlic powder, minced onion, salt and pepper. I then combine the potato mixture with cracker meal, and one egg until it can form a ball.
I then take balls of potatoes and fry in oil until golden brown. They are yummy!

Note: Lowfat cream cheese works fine, but instant potatoes do not.

Reserve 1 egg white and mix remainder of ingredients together. Form into balls. Brush with beaten egg white and roll in flour. Bake at 350 degrees F until brown or fry in deep fat. A good way to use up leftover ham and mashed potatoes!

Directions
Preheat oven to 350 degrees F. Pierce potatoes with fork. Bake 1 hour. Let stand 5 minutes. Cut potatoes in half crosswise; scoop out centers, leaving 1/8 inch thick shells. Place potatoes in large bowl. Add butter and milk; beat with electric mixer on medium speed until fluffy. Spoon evenly into shells; lightly press 1 cheese cube in center of each potato. Place potatoes in muffin pan. Bake 30 minutes or until heated through. Sprinkle each with 1/2 tsp. bacon bits. Top with broccoli.
