Quick and Easy Mexican Casserole

This can be done in 20 minutes and can be as hot as you like.

Ingredients:

Steps:

  1. Brown and drain the meat.
  2. Add the undrained tomatoes, seasoning mix, water, pasta and packet from mac n' cheese and corn. Stir well.
  3. Cook covered on medium heat for 7-9 minutes. Stir 3-4 times.
  4. I like to serve with a little shredded cheese and a dollop of sour cream on top.

For more heat use Rotel tomatoes or a little hot sauce.
I don't have a lid for the pan I use so I an extra 1/2 cup of water.
For more tomato flavor use 1 cup of tomato juice for 1 cup of water.
If you reheat in the microwave you need to add a little water since the pasta will absorb most of the sauce.
If you have large chunks of tomatoes mash them with a potato masher in a bowl. The ones I buy are pretty big so I do this.
Fresh corn (is the best) or frozen corn works. I use 1 1/2 cups.
Ground pork worked as did ground chicken.
