Roasted Chayote Squash

The roasted chayote squash.I had never had a chayote squash before, so this was a welcome addition to our dinner tonight. Feel free to use any spices you wish.

Prep Time: 10 minutes

Cook Time: 40 minutes

Total Time: 50 minutes

Yield: 4

Ingredients:

  • 2 chayotes
  • 2 tsp dried thyme
  • 1 tsp garlic
  • 1/4 tsp Himalayan pink salt
  • 1/2 tsp onion powder
  • 1/2 tsp black pepper
Ingredients for roasted chayote squash.
 

Steps:

  1. Preheat the oven to 375 degrees F and line a large roasting pan with parchment paper.
  2. Cut the squash in half, peel, scoop out seeds and cut in thin slices.
  3. Roasted Chayote Squash
     
  4. Prepare the dry rub by combining all of the herbs together in a plastic bag.
  5. A bag of spices.
     
  6. Pour a small amount of coconut oil into your hands and coat each slice.
  7. The cut up chayote squash.

  8. Put a few slices at a time into the bag and coat both sides with the spices.
  9. Evenly distribute the slices onto the prepared pan.
  10. The seasoned chayote squash.
     
  11. Roast for 40 minutes or until crisp and golden, turning over halfway.
