Instant noodles is what we commonly get during this pandemic aside from canned goods. Food is scarce at this very moment and I have to innovate so that we can have something to eat until another quarantine day ends.
1-2 packs instant noodles (pancit canton)
1-2 tea cups water (ratio is 1:1; 1 tc for 1 pack noodles)
1 red onion, chopped
pinch of salt
pinch of ground pepper
2 Tbsp vegetable oil
Let's start by boiling a tea cup of water. Add noodles when water starts boiling then adjust heat to medium.
Meanwhile in a bowl, crack eggs, and add salt and pepper.
Beat the eggs. Then gradually add chopped onions.
Add soy sauce seasoning from the pack of instant noodles.
When the water starts to reduce, pour powdered seasoning into the noodles. Stir fry until well combined.
Pour cooked noodles into the beaten egg. Soak and coat noodles well.
Heat up some oil in a pan and drop small portions of noodle mixture. Flatten them like pancakes.
Fry until both sides are brown, then it will be ready to serve.
