Sheet Pan Chicken Fajitas

A tasty and easy recipe to make. I baked it in the toaster oven to avoid heating up the kitchen. I served mine over rice, instead of with tortillas.

Total Time: 15 min prep, 30 minutes cooking

Yield: 6-8 servings

Ingredients:

Steps:

  1. Combine the chicken, oil and seasoning in a bowl. Mix until all the chicken is covered.
  2. Line a pan with foil. Spread the chicken on the pan.
  3. Bake at 425 degrees F for 15 minutes. While chicken is baking, slice onions in rings and peppers in long strips.
  4. Take chicken out of oven. Add the onion and peppers to the chicken. Stir to combine.
  5. Bake another 15 minutes. Chicken should be done and vegetables should be tender.
  6. Serve with tortillas and toppings.

This sounds delicious and easy. I am going to try it today. I have all the the ingredients on hand. I agree making it in my convection toaster oven keeps the house cooler. I will be serving it in a tortilla with salsa and shredded cheese on top. Thanks for recipe.
