I made some pickled cucumbers that were really tasty! In one batch I peeled the outer layer and in another I didn't. I prefer the peeled ones. Enjoy!

Prep Time: 8 Minutes

Total Time: 8 Minutes

Yield: 1 Cucumber


  • 1 cucumber
  • apple cider vinegar
  • sliced onion
  • 1 tsp mustard seeds
  • 1 pinch chia seeds
  • 1 in slices of chili (optional)


  1. I sliced a whole cucumber into both chunks and thinner slices.
  2. I added them to a clean jar and then filled the jar with apple cider vinegar. I added mustard seeds, chia seeds and a few slices of onion. For the spicy ones I added a couple of slices of a red chili pepper.

  4. I store them in the door of my fridge. These are lovely with cheese and crackers or in a ploughman's lunch. I even had them in a cream cheese deli wrap.

This brine can be used with other vegetables such as peppers and carrots. It can even be used with hard boiled eggs!
