Spring Veggie Saute

Well, spring is upon us and it has got me thinking about vegetables. That sounds funny, but it's true! Minus a bit of slicing time, this is a very easy and quick side dish to prepare. Add some spices, and you end up with a savory dish that even a table of children will gobble up without a single complaint!


Total Time: About 20 minutes, prep included

Yield: About 6 generous sides



  1. Peel and slice your zucchini. I did this by hand, they are roughly 1/4 inch thick. Peel and slice your carrots.

    I used a hand held mandolin slicer for the carrots. I suggest doing this for carrots, as it will give you thinner slices that will cook quicker.
  2. Pour 3-4 tablespoons olive oil in the bottom of your large pan.
  3. Add your sliced veggies.
  4. Add your minced garlic, basil and salt.
  5. Stir well.
  6. Cook over medium to high heat for about 9 minutes, stirring constantly.
  7. Enjoy! :)

I'd suggest not peeling the need to. And peel probably contains vitamins.
