Unstuffed Cabbage

Take advantage of cabbage sales and make this. It makes a lot, is healthy, delicious and freezes well.



  • 1 medium cabbage, chopped
  • 1 lb lean ground beef
  • 1 onion, chopped
  • 1/2 cup uncooked rice
  • salt and pepper to taste
  • 1 10-1/2 10 1/2 oz.can tomato soup
  • 1 soup can water
  • 1 can tomato sauce
  • 1-2 Tbsp brown sugar
  • Juice of 1/2 lemon


  1. Place cabbage in greased 2 qt. casserole.
  2. Brown beef and onion.
  3. Stir in rice and place on top of the cabbage. Season to taste with salt and pepper.
  4. Combine remaining ingredients and pour over all. Stir to combine.
  5. Cover with foil and bake at 350 degrees F for 1 hour or until the rice is soft. Mine took 90 minutes. Can be made in crock pot as well.

This sounds delicious but I can't have the tomato soup as it is not gluten free. I'm wondering if I could make a tomato soup substitute to use instead.


I found a recipe on line. It calls for 8 oz. can of tomato sauce, 1 tbsp. corn starch, 1 1/2 tbsp. brown sugar and 1/2 tsp. salt.
