Personally I have never been a big fan of pancakes, syrup isn't my thing. But I remember many Saturday mornings waking up early to make them for my brother.
For me, this recipe is perfect because syrup isn't required. I simply add a little butter and they are perfect.
- 2 cups flour
- 2 Tbsp sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 32 fl oz yogurt
- 2 eggs
- 4 Tbsp vegetable oil
- Combine flour, sugar, baking powder, baking soda, and salt in a small bowl.
- In a larger bowl combine yogurt, egg, and vegetable oil.
- Add flour combination to wet and mix at medium speed.
- Grill and enjoy!

You can use plain or any flavored yogurt if you like to add a bit of pizzazz!
You can also use a little less yogurt if you like more of a "cake" like texture.

These sound wonderful and healthy, too. Personally, I like a little dusting of powdered sugar as opposed to syrup.
Or some fresh fruit would make it even healthier. I love yogurt...especially Greek Yogurt. Thanks for posting!

I feel the same way about pancakes. I will have to try them. I have been making pancakes for my 1 year old son lately, these seem to have a nice healthy twist. Thanks for sharing.
