There should be that type of recipe in cookbooks or else google it and see what you come up with.

My husband and I really liked this one using carrots instead of mixed vegetables.

Ingredients
4 large potatoes, peeled and cubed
1 tablespoon butter
1 tablespoon finely chopped onion
1/4 cup shredded Cheddar cheese
salt and pepper to taste
5 carrots, chopped
1 tablespoon vegetable oil
1 onion, chopped
1 pound lean ground beef
2 tablespoons all-purpose flour
1 tablespoon ketchup
3/4 cup beef broth
1/4 cup shredded Cheddar cheese

1. Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and mash. Mix in butter, finely chopped onion and 1/4 cup shredded cheese. Season with salt and pepper to taste; set aside.

2. Bring a large pot of salted water to a boil. Add carrots and cook until tender but still firm, about 15 minutes. Drain, mash and set aside. Preheat oven to 375 degrees F (190 degrees C.)

3. Heat oil in a large frying pan. Add onion and cook until clear. Add ground beef and cook until well browned. Pour off excess fat, then stir in flour and cook 1 minute. Add ketchup and beef broth. Bring to a boil, reduce heat and simmer for 5 minutes.

4. Spread the ground beef in an even layer on the bottom of a 2 quart casserole dish. Next, spread a layer of mashed carrots. Top with the mashed potato mixture and sprinkle with remaining shredded cheese.

5. Bake in the preheated oven for 20 minutes, or until golden brown.

Can't give you measurements on this but here is what I do. Fry hamburger. Drain. Add 1 large can of vegetable beef soup. My hubby requested sauteed onions & cooked carrots to add also. Place in baking dish. Top with mashed potatoes. Sprinkle on cheese if you like. Bake @ 350 to desired heat & enjoy!

My son-in-law loves home cooking, my daughter loves quick box cooking! He asked me to make shepherd's pie using pork 'n beans. Not cottage pie, he swears it only has potatoes, meat, and pork n beans. Help! Anyone have a recipe?

I found this recipe on Allrecipes.com as submitted by Sophie Scott. She writes:
"This is a hearty English meal, made with lamb mince, hence the name! Although it is called a pie it doesn't use any pastry and is so cheap, quick and easy to make, you'll enjoy making it! This is a 'larder cupboard' recipe, which means you can substitute for whatever you have handy in the cupboard!"

The recipe has great reviews and you can substitute ground beef for the lamb. I hope it will help you.

Ingredients:

4 large baking potatoes, peeled and cubed
1 tablespoon butter
1/4 cup milk
2 pounds ground lamb
1 tablespoon Worcestershire sauce
1 cube beef bouillon
12 button mushrooms, sliced
1 onion, finely chopped
1 (16 ounce) can baked beans
1 (12 ounce) can canned diced tomatoes
3 tablespoons brown gravy mix (optional)
1 (15 ounce) can carrots, drained (optional)

Directions:

1. Preheat the oven to 400 degrees F (200 degrees C).
2. Place the potatoes into a saucepan and fill with enough water to cover. Bring to a boil, then cook over medium heat until tender enough to pierce with a fork, about 10 minutes. Drain and mash with butter and milk to your desired texture.

3. Meanwhile, crumble the ground lamb into a large skillet. Cook and stir until no longer pink. Season with Worcestershire sauce and beef bouillon. Add the mushrooms and onion; continue to cook and stir until tender. Transfer the contents of the skillet to a large casserole dish.
4. Mix the baked beans, diced tomatoes, gravy mix and carrots in with the lamb. Dollop big blobs of mashed potatoes over the top and carefully spread evenly to cover the entire top. Rake over it with a fork to create a crispy texture on top when it browns.

5. Bake for 10 minutes in the preheated oven, until the top is browned and crisp.

I have made this shepherds pie recipe for my son every year for his birthday since he was five years old. He is 40 TODAY! Now I make it for his son, too! I know its an old question, but I hope this recipe finds you, and that you enjoy it.

Adams Shepherds Pie:
1 and 1/2 # ground beef (I use 80/20)
1 Medium onion, chopped
1 clove garlic, minced
2 Tbl Worcestershire sauce
1 Tbl sugar
1 tsp onion powder
Salt/Pepper to taste ( salt not needed)
1 can corn-drained
2 cans pork & beans- undrained
2 cups shredded cheddar cheese.
8 servings of mashed potatoes ( I add 1/4 cup cream cheese, 1 Tbl chopped chives, 1 tsp onion powder, 1 cup Parmesan cheese to my mashed potatoes)

1)brown beef, onion, garlic and drain fat. Return to LOW heat.
2)Add seasonings & Worcestershire sauce. Stir.
3)Add 1 cup of cheese and stir.
4) Add sugar, corn, and beans. Mix well and simmer 15 minutes.
5)Pour into 9x11 baking pan.
6) top with rest of cheese.
7)Evenly top with dollops of mashed potatoes, then spread to cover to edges of pan. (Helps spread easier)
8) Cover with foil and bake at 350 for 20 minutes.
9)Remove foil and bake 15-20 minutes, or until light crust and golden brown edges.
10) Remove from oven and let stand 10-15 minutes.
11) Serve to anxiously awaiting hungry family! Enjoy!

You can add whatever you want to the hamburger, onions, peppers, etc. while you brown the hamburger. Drain hamburger when done.
