Place the tomatoes, red onion, cilantro, jalapeno pepper, garlic and lime juice into a large mixing bowl. Pour in the vinegar and vegetable oil and gently mix to combine. Season with salt to taste.
Cover, and refrigerate 1 hour before serving.
