A tasty twist of ingredients usually called for in traditional chef salads.


  • 8 cups mixed salad greens
  • 4 oz salami, sliced and cut into strips
  • 4 oz mozzarella, sliced and cut into strips
  • 2 cups cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 2 Tbsp. balsamic vinegar
  • 2 tsp. Dijon mustard
  • 1/2 tsp. minced garlic
  • 1/2 tsp. salt
  • 1/2 tsp. pepper


Place greens on serving plates, top each with equal amounts of salami, mozzarella, tomatoes and onions.

Mix oil, vinegar, mustard, garlic, salt and pepper well, drizzle over each salad and serve.

  • 1 head lettuce
  • 1 onion, diced
  • 4 tomatoes, chopped
  • 2 cups cheddar cheese, grated
  • 8 oz. nacho cheese tortilla chips, crushed
  • 1 lb. ground beef
  • 1 can kidney beans
  • 1 cup Thousand Island dressing
  • 1 cup taco sauce
  • sliced green and black olives


Shred lettuce into small pieces; place in large bowl.


Add onions, tomatoes and cheese; toss well. Brown ground beef; add kidney beans. Heat thoroughly; drain off excess liquid. Add meat mixture to salad and toss. Add crushed chips; toss again. Combine Thousand Island dressing and taco sauce; mix well and pour over salad. Toss and garnish with olives.

  • 1 onion
  • 1 head lettuce
  • 8 oz. Thousand Island Dressing
  • 1 bag tortilla chips (small)
  • 1 large sliced avocado
  • 1/4 tsp. salt
  • 1 can kidney beans (15 oz.)
  • 4 tomatoes
  • 4 oz. grated cheese
  • 3 drops hot sauce
  • 1 lb. ground beef


Chop onion, tomatoes and lettuce. toss with grated cheese, dressing and hot sauce. Crunch and add tortilla chips. Slice and add avocado. Brown ground beef; add kidney beans and salt. Simmer for 10 minutes and mix into cold salad. Decorate with tortilla chips and avocado and tomato slices.
