This is really nice to have on hand for a variety of uses. Add a tablespoon or two to chilled seltzer water, or add it to your iced or sweet tea. Mix it into hot water for ginger tea. Drizzle a little over cake topped with fresh fruit. A little bit drizzled over oatmeal is very good, too. It goes very well with apple and peach desserts.

Ginger is very good for soothing the tummy and is an effective treatment for motion sickness. It will keep for at least 2 weeks in the fridge, but you can freeze it in an ice cube tray and then bag the cubes. Thaw as needed.

Ingredients:

  • 1 lb. fresh ginger root, peeled
  • 3 1/2 cups water
  • 1 1/2 cups sugar

Directions:

Mince the ginger in a food processor. Mix with the water, bring to a boil, and simmer, uncovered, for 10 minutes. Cover and let stand overnight (off the heat).

Strain the mixture through doubled cheesecloth, squeezing to get all the liquid out. Throw the solids away.

Mix the juice with the sugar, bring to a boil, and simmer over medium heat until reduced to 2 cups, about 15 minutes.
