Eggs Goldenrod

Makes 2 hard boiled eggs go a long way.


  • 2 hard boiled eggs
  • milk (about 3/4 cup)
  • flour (enough to thicken milk)
  • butter
  • toast or biscuits


Hard boil and peel two eggs. Separate white and yolk. Make a white sauce by, melting butter in a sauce pan. Add flour, stir till pasty. Add milk, salt, pepper, and chopped up egg white. Simmer. Pour over toast or biscuits. Crush yolk and sprinkle on top.

This is one of the first things I learned to cook in Home Ec. when I was in high school. It is so good. It's good with shredded cheese sprinkled on top too. I haven't made it in years, maybe for breakfast Sunday morning! yum-yum

YES indeed, Home EC. We made this in high school in central CA, too. Hadn't thought of it in years. Thanks for the reminder. I'll be sure to teach great granddaughter this easy breakfast or after school snack. GG Vi
