Zucchini and Corn Medley
- 4 or 5 store size zucchini (sliced)
- 1 Tbsp. bacon drippings
- 1/4 tsp. black pepper
- 1/3 cup chopped onion
- 1 tsp. salt
- 1 clove garlic (minced)
- 1/2 green bell pepper (chopped)
- 1 (16 oz.) pkg. frozen whole kernel corn (thawed)
Heat bacon drippings in a large skillet. Add rest of ingredients; cover and cook over medium heat for 5-10 minutes, or till zucchini is tender crisp. Stirring occasionally.
